15-minute garlic-butter shrimp

    Pat the shrimp dry and season with salt.

    Heat the olive oil in a large skillet over medium-high until shimmering. Add the shrimp in a single layer and cook 90 seconds per side, until just pink. Transfer to a plate.

    Reduce heat to medium. Add the butter, garlic, and red pepper flakes. Cook, stirring, until fragrant — about 45 seconds. Do not let the garlic brown.

    Return the shrimp to the pan. Toss to coat, then finish with lemon juice and parsley off the heat.

Chef's tips

  • Dry shrimp sear. Wet shrimp steam. Pat them dry twice.
  • Serve immediately — the butter tightens as it cools.
